Ingredient for chocolate sponge cake:
Eggs 4 (Room temperature)
Sugar 100g (1/2cup)
Vanilla essence 1 teaspoon
All-purpose-flour 80 gram (2/3 cup)
Cocoa powder 20 gram (¼ cup)
Baking powder 1 teaspoon
Sifting the Dry ingredient:
Take a bowl, sift the flour, cocoa powder, and baking powder together. sifting helps to aerate the dry ingredient and remove lumps.
Beating the Eggs and Sugar mixture:
In a separate bowl, take 4 eggs and separate their egg whites and egg yolks. Begin by beating the egg whites with a beater at medium speed until they are slightly beaten (beat for about one minute). Then, gradually add sugar little by little in 3 or 4 steps while keeping the beater on and continue mixing. After that, add the 4 egg yolks one by one and keep mixing simultaneously. Continue beating until the sponge mixture becomes fluffy, thick, and creamy (be careful not to overbeat).
After that, add vanilla essence and beat few second more.
After beating, add the dry ingredients (flour, cocoa powder, and baking powder) to the egg and sugar mixture. Gently fold and mix with a light hand, being careful to avoid overmixing, as it can result in a dense cake. Once everything is combined, stop stirring. Do not overmix.
Pour the batter:
After completing the previous step, take a 7-inch cake mold. Lightly grease the inside of the mold with oil, and then place a piece of parchment paper inside the mold.
